What You Need:            (To Make: about ½ cups)

  • ½ cup fresh lemon juice
  • 1 cup scraped, coarsely chopped fresh ginger root
  • ½ cup white raisins
  • 2 tablespoons finely chopped garlic
  • 2 teaspoons salt

  • How To Cook:
    1. Combine the lemon juice, ginger, raisins, garlic and salt in the jar of an electric blender and blend at high speed for 30 seconds. Turn the machine off and scrape down the sides of the jar with a rubber spatula, then blend again for 30 seconds longer, or until the mixture is reduced to a smooth puree.

    2. Serve the chutney at once or cover tightly and refrigerate until ready to use. It may be kept in the refrigerator for 1 to 2 days.
