What You Need:            (To Make: about 4 dozen wonton wrappers)

  • 4 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup cold water

  • How To Cook:
    1. Sift the flour and salt into a bowl, make a well in the center and pour into it the eggs and cold water. With your fingers or a spoon, mix the flour and liquid ingredients together until they can be gathered into a soft ball.

    2. Knead the dough in the bowl for 4 to 5 minutes, or until it is smooth but still soft. Do not overknead or the dough will become stiff.

    3. Divide the dough into 4 equal-sized balls. On a lightly floured surface, roll one ball at a time into a 14-inch square about 1/16-inch thick.

    4. For soup wonton or deep-fried wanton, cut the dough into 3½ -inch squares with a sharp knife or pastry wheel. For steamed pork dumplings, use a 3-inch cookie cutter or the rim of a glass to cut the dough into rounds.

    5. If the wrappers must rest for any length of time, cover them with a lightly dampened towel. If you wish to freeze them, wrap them securely in foil or plastic wrap.
