What You Need:

  • 2 cans jamaican Ackee
  • 1¼ cups peeled de-veined shrimp
  • 1 small pack lasagna
  • 1 large onion
  • 3 cloves garlic
  • ½ teaspoon thyme
  • 3 cups shredded cheddar cheese
  • 2 cups white sauce (take any from our list recipe)
  • 2 tablespoon parsley
  • 1 cup red & green sweet peppers
  • ½ teaspoon scotch bonnet pepper

  • How To Cook:
    1. Boil lasagna for 8 minutes.

    2. Drain and cool under cold top water, put aside.

    3. In a hot skillet, saute onions, garlic, peppers, thyme and parsley, fold in shrimp.

    4. Drain liquid from cans of ackee and odd to shrimp mixture (do not overcook).

    5. Grease rectangular ovenproof dish; arrange layer of lasagna followed by ackee mixture and top with white sauce and cheese.

    6. Repeat layer three times.

    7. Top with layer of sauce and cheese, sprinkle with parsley and a dash of black pepper.

    8. Bake at 375°F until golden brown.
