What You Need:

  • 1 cup red peas (soaked overnight)
  • 2 quarts hot water
  • 1 slice salt pork or beef
  • 3 cups rice
  • 1 sprig thyme
  • 1 grated coconut
  • 1 tablespoon oil
  • Salt and piece of hot pepper

  • How To Cook:
    1. Brown onion with salt pork and seasoning.

    2. Meanwhile, add 1 cup hot water to grated coconut and squeeze out cream.

    3. Place peas in a pot with 2 quarts water and cook until tender.

    4. Add salt pork and seasonings and cook for ten minutes.

    5. Add rice and cook over low heat until ready.

    6. Add hot water if more liquid is needed.
