What You Need:

  • 1 cup cornmeal
  • ¾ cup water
  • ¾ cup coconut milk
  • 1 onion chopped finely
  • 1 tomato diced finely
  • Thyme
  • ½ tablespoon oil
  • ½ tablespoon black pepper
  • ½ teaspoon salt

  • How To Cook:
    1. Pour oil in frying pan and saute onion, tomato and black pepper.

    2. Add water to frying pan and bring to a boil.

    3. Mix cornmeal and coconut milk and pour into boiling liquid.

    4. Stir repeatedly and add thyme and salt.

    5. Cook until mixture is smooth and thick.

    6. Salt fish or other meats may be added for an extra twist.
