What You Need:            (To Serve: 6)

  • 6 lamb shoulder chops, cut ¾ to 1 inch thick
  • ¼ cup flour
  • 1½ teaspoons salt
  • 1/8 teaspoon pepper
  • 3 tablespoons lard or drippings
  • 1/8 teaspoon sage
  • ¼ teaspoon thyme
  • ½ cup tomato juice

  • How To Cook:
    1. Mix flour with salt and pepper. Dredge chops with seasoned flour; brown meat on both sides in lard or drippings.

    2. Pour off drippings.

    3. Add sage, thyme and tomato juice; cover tightly and cook slowly about 1 hour or until meat is tender.

    4. Thicken cooking liquid for gravy with additional flour if desired.
