		One 2½-to 3-pound chicken
		3 ounces Chinese rice sticks
		Salt to taste
		2 onions, chopped
		2 potatoes, peeled and diced
		Water, as needed

	1. Cut the chicken into serving-size pieces. Put it in a casserole and cook, covered, in the microwave oven for 20 minutes. Add the peeled and cut up onions and potatoes.

	2. Continue cooking, covered, in the microwave oven, stirring from time-to-time until everything is tender. (This should take about 15 minutes.) Season.

	3. In the meantime, break the rice sticks into 3-inchpieces and soak in cold water about 15 minutes. Cook, covered, in a separate casserole in the microwave oven until almost tender.

	4. Add to the chicken and vegetables and continue cooking until the chicken pan sauce is absorbed. Add more water, if needed. Serve piping hot.

	    If rice sticks or long rice are not available in your area, a somewhat similar effect can be created by adding a little vermicelli-type spaghetti.
