What You Need:

  • 1 large tin pigeon peas
  • 1 medium sized onion, sliced
  • 1 teaspoon thyme
  • 1 sweet pepper, diced tablespoons tomato paste
  • 4 cups water
  • 2½ cups grits
  • 1 teaspoon salt
  • ½ hot pepper
  • 2 tablespoons cooking oil

  • How To Cook:
    1. Pour oil in frying pan. Add onion and sweet pepper and saute lightly.

    2. Add tomato paste and allow to steam down for about 5 minutes.

    3. Add thyme and hot pepper.

    4. Pour the mixture into a pot with peas and water.

    5. Allow the mixture to a boil for 10 minutes.

    6. Add grits, stirring constantly for about 10 minutes then lower flame and continue cooking for 15 to 20 minutes.
