What You Need:            (To Make: 4 jars)

  • 2 pounds sugar
  • 2 quarts water
  • ¼ cup salt
  • 1 pint vinegar
  • Peel of watermelon
  • 4 cloves
  • 1 piece hot pepper
  • Pieces of cinnamon stick (or grated nutmeg)

  • How To Cook:
    1. Peel off outer green skin of watermelon and chop the white flesh into pieces.

    2. Cover with water and salt, and simmer until tender.

    3. Bring remaining ingredients to a boil for 10 minutes.

    4. Add tender melon to this and continue to simmer until melon is transparent. Pack in jars.
