What You Need:            (To Serve: 4)

  • 2 medium-sized cucumbers, peeled and thinly sliced
  • Salt
  • 12 radishes, cleaned and sliced
  • 1 cup sliced scallions, with some tops
  • ½ to ¾ cup plain yogurt
  • Pinch of sugar
  • Salt, pepper to taste
  • 3 tablespoons chopped fresh mint or parsley

  • How To Cook:
    1. Put cucumbers in a colander; sprinkle with salt; allow draining 30 minutes.

    2. Wipe dry and combine with radishes and scallions in a shallow bowl.

    3. Mix yogurt, sugar, salt, and pepper; spoon over vegetables; mix well.

    4. Refrigerate 1 to 2 hours to blend flavors.

    5. Serve sprinkled with mint or parsley.
