What You Need:            (To Make: 1¼ cups)

  • 2 tablespoons all-purpose flour
  • 1 tablespoon sugar
  • ½ teaspoon dry mustard
  • 1 teaspoon salt or to taste
  • Dash of cayenne
  • 1 cup milk
  • 1 egg or 2 egg yolks, slightly beaten
  • 3 to 4 tablespoons cider vinegar or fresh lemon juice

  • How To Cook:
    1. Combine flour, sugar, mustard, salt, and cayenne in top of a double boiler; mix well.

    2. Gradually add milk and cook over simmering water, stirring constantly, until slightly thickened and smooth.

    3. Add some of the hot mixture to beaten egg or egg yolks; add to remaining hot mixture and cook over simmering water until thickened, about 3 minutes.

    4. Remove from heat and stir in vinegar or lemon juice.

    5. Chill before serving.

    THE RECIPE ABOVE MAY BE VARIED BY ADDING TO 1¼ CUPS OF THE DRESSING:
        ¼ cup cottage cheese and 1 tablespoon minced scallions
        OR 1 cup whipped cream
        OR 1 to 2 tablespoons horseradish before cooling
        OR ½ cup chopped, peeled, and seeded cucumbers
        OR 2 chopped hard-cooked eggs and 1 tablespoon chopped chives
        OR 1 cup sour cream and 1 tablespoon chopped fresh dill
     
    1. OR ¼ cup minced onion, 3 tablespoons chili sauce, and 1 tablespoon chopped gherkin
