American cooks have created a large number of luscious salads that feature or include pears. The pears may be sliced and combined with fruits and/or seafood in mixed salads; cut in half and stuffed with cream cheese and nuts, herb-flavored jelly, chutney, Roquefort cheese balls, or Camembert; used in making; colorful molded salads and fanciful delights for children; or sliced and served on lettuce and topped with salad dressing. This salad is from the state of Washington, where many of our best pears are grown.

What You Need:            (To Serve: 4)

  • 4 large fresh pears
  • Lettuce leaves, washed, dried, and chilled
  • 2 tablespoons fresh lemon juice
  • 1 package (3 ounces) cream cheese, softened
  • ½ cup minced green peppers
  • ½ cup chopped walnuts

  • How To Cook:
    1. Peel pears and cut in half lengthwise. Remove cores.

    2. Place 2 pear halves, cored side up, over lettuce leaves on each of 4 small plates. Sprinkle with lemon juice.

    3. Combine cream cheese and green peppers and fill pear centers with mixture. Sprinkle with nuts.

    4. Serve with mayonnaise or salad dressing, if desired.
