What You Need:            (To Serve: 2 - 4)

  • ½ cup potato puree
  • A pinch of salt
  • 3 oz butter
  • 4 pairs of Vienna sausages
  • 3 oz flour
  • Egg white to glaze
  • 1 egg yolk
  • Deep fat for frying

  • How To Cook:
    1. Mix the potato puree, butter, flour, egg yolk and salt to a smooth consistency, then leave to stand for 30 minutes.

    2. Skin and halve the sausages.

    3. Roll the potato mixture out thinly and cut into oblong pieces, wrap a sausage in each piece, join the edges with egg white and pinch in the ends of each roll to give a neat shape.

    4. Deep-fry or bake in a moderate oven (350°F) (in the latter case, brush with egg yolk).
