  • 2 oz semolina
  • 2 oz crystallized fruit
  • 1 pint cream
  • 2 oz sultanas
  • 3 oz sugar
  • 2 well-beaten eggs
  • 4 oz ground almonds
  • 2 oz shelled Valencia almonds
  • 2 oz shelled walnuts

  • How To Cook:
    1. Make a light semolina pudding with the semolina and cream, add the sugar, ground almonds, chopped walnuts and crystallized fruit.

    2. Add the sultanas and stir in the eggs.

    3. Cover the top with chopped or sliced almonds and a little sugar.

    4. Bake in a well-buttered dish for about 35 minutes in a moderate oven (350°F) until golden-brown.
