(Qaghaq Tal - Qastanija Bil - Chasel)
 
This is a special Maltese sweet for Christmas.

What You Need:

FOR THE PASTRY
  • 1½ pound flour
  • ¼ pound margarine
  • ¼ pound sugar
  • ¼ pound lard
  • Water to mix
  • ¼ pound semolina

    FOR THE FILLING
  • 2 cups honey or treacle
  • 1 teaspoon bicarbonate of soda
  • 2 cups water
  • Pulp of 2 tangerines or 1 orange
  • 1 tot anisette
  • 2 cups sugar
  • 4 teaspoons fine cocoa powder
  • 2 teaspoons ground spice

  • How To Cook:
    1. Place in a deep pan all pastry ingredients with the exception of the semolina and bring to the boil; stir in the semolina very gently and cook, stirring once or twice.

    2. When the mixture thickens, remove from the heat and allow cooling, and then preparing the Honey Rings as follows: Roll out the pastry into long strips not less than 2 inches wide, put some filling along the center of each and roll the pastry over the filling.

    3. Cut the filled pastry into lengths and form into rings.

    4. Slit the top of the rings at intervals.

    5. Put in a floured oven tin and bake in a moderately hot oven (425°F).

    6. When rings are golden in color and the filling seeps through the slits, remove from the oven.
