What You Need:            (To Serve: 4)

  • 1½ pound young nettles
  • A few cooked sausages
  • 1 pound spinach
  • 2 tablespoons yoghourt or sour cream
  • 1 pint rich bone stock

  • How To Cook:
    1. Blanch the nettles and mix them with the washed spinach.

    2. Pour the boiling stock over them and simmer gently for 40 minutes, adding a little more stock if necessary.

    3. Strain and serve with a garnish of small lengths of cooked sausage and add the yoghourt just before serving.
