What You Need:            (To Serve: 6)

  • 3 cups grated raw carrots
  • 1 cup chopped peanuts
  • ½ cup seedless raisins
  • 1 cup mayonnaise
  • 3 tablespoons orange juice
  • 6 navel orange slices
  • 6 crisp lettuce leaves, washed and dried

  • How To Cook:
    1. Combine first five ingredients in a bowl and refrigerate 1 hour or longer to blend flavors.

    2. When ready to serve, place each orange slice on a lettuce leaf on an individual serving plate.

    3. Top with a mound of carrot mixture on each orange slice.
