What You Need:            (To Serve: 8)

  • 3 cups diced cooked ham
  • 3 cups diced cold, boiled potatoes
  • 2 cups cooked green peas
  • ½ cup minced scallions, with some tops
  • 6 gherkins, diced
  • 1 cup chopped celery
  • About 1½ cups mayonnaise
  • 3 tablespoons prepared sharp mustard
  • Salt, pepper to taste
  • Crisp lettuce leaves
  • 16 stuffed hard-cooked egg halves
  • 16 hollowed cherry tomatoes filled with chive-flavored mayonnaise
  • 6 one-inch thick cucumber rounds topped with dill flavored sour cream
  • 8 large mushroom caps filled with anchovy-flavored cream cheese

  • How To Cook:
    1. Combine first eight ingredients in a large bowl.

    2. Season with salt and pepper.

    3. Refrigerate 1 hour or longer to blend flavors.

    4. When ready to serve, spoon salad over lettuce loaves in center of a large round or oval platter.

    5. Surround with remaining ingredients.
