  • 2 cups diced cold, cooked chicken
  • 1 cup diced cold, cooked potatoes
  • 1 cup diced raw zucchini or cut-up cold, cooked green beans
  • ½ cup diced radishes
  • ½ cup diced raw mushrooms
  • ½ cup diced peeled cucumbers
  • 1 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill or 1teaspoon dried dill weed
  • Salt, pepper to taste
  • 3 tablespoons chopped fresh parsley
  • 12 cooked or canned beet slices
  • 12 stuffed or pitted black olives

  • How To Cook:
    1. Combine chicken and vegetables in a medium bowl.

    2. Mix mayonnaise, lemon juice, dill, salt, and pepper.

    3. Add to chicken €“ vegetable mixture.

    4. Refrigerate 1 hour or longer to blend flavors.

    5. Spoon into a serving dish, shaping into a mound.

    6. Garnish top with parsley and surround with beets and olives.
