What You Need:            (To Serve: 4)

  • 2 cups conch meat
  • 5 cups water, unsalted
  • 2 tablespoons oil
  • 2 onions, chopped
  • 2 stalks celery, chopped
  • 1 medium sweet red pepper, chopped
  • ¼ teaspoon thyme
  • 2 garlic cloves, finely chopped
  • Salt and pepper to taste
  • 1 tablespoon dry sherry (optional)

  • How To Cook:
    1. Pound conch until tender, then dice into cubes.

    2. Boil in water for 20 minutes.

    3. Saute the chopped onion, celery, peppers, garlic in the oil until just tender.

    4. Season with thyme, salt and pepper.

    5. Simmer for 30 minutes. Reseason if necessary.
