What You Need:

  • 6 medium-sized potatoes
  • 1 onion
  • 2 eggs
  • 2 oz flour
  • 1 teaspoon salt
  • Fat or oil for deep frying

  • How To Cook:
    1. Peel and grate potatoes into a mixing bowl. Squeeze out liquid. Peel and grate onion into potatoes.

    2. Add eggs, flour and salt and stir to make a smooth batter that will drop heavily from the spoon.

    3. Heat the fat in a heavy frying pan; drop the batter from a spoon into the hot fat, making pancakes 3 inches in diameter.

    4. Fry over moderate heat until brown on the underside, turn and brown other side. Lift out and drain off excess fat.

    5. The pancakes should be puffed and crisp.
