What You Need:            (To Serve: 6 - 8)

  • 3 cups rice
  • Salt and pepper
  • 3 cups small onions
  • ½ cup butter
  • 2½ cups lean mutton
  • 1 cup chick peas

  • How To Cook:
    1. Wash and drain rice, put in pan with salt, pour boiling water to cover it and leave to soak for 2 hours.

    2. Peel onions, leaving them whole. Fry in butter until light brown.

    3. Cut the meat into pieces the same size as the onions; add to the latter and let fry until brown, together with the chick peas which have soaked overnight.

    4. Season to taste, cover with water and simmer till the meat is tender. Drain rice and wash carefully in cold water.

    5. Put it on top of the other ingredients, adding water if necessary to bring the level of the liquid above the rice.

    6. Bring to the boil again and simmer till the rice is well cooked, adding more water if it seems too dry.

    7. Serve with yoghourt. Bulgur or crushed wheat may be used instead of rice if wished.
