What You Need:

  • 2 pound striped bass or other fish
  • 2 medium onions
  • ½ cup olive oil
  • ½ cup tomato paste
  • 1½ cups water
  • 3 cloves garlic (crushed)
  • Paprika
  • Salt to taste
  • Juice of ½ lemon or lemon slices
  • 3 stalks chopped celery
  • 4 small carrots (diced)
  • ½ teaspoon chopped parsley

  • How To Cook:
    1. After cleaning fish, cut into 1-inch slices.

    2. Cut the onions into rings, and fry in a heavy pan in 1/8 cup of olive oil until light brown.

    3. Add tomato paste, 1½ cups of water, garlic, paprika, salt, juice of ½ lemon, remaining olive oil, celery and carrots.

    4. Cover and cook 25 minutes.

    5. Place fish in deep baking dish and cover with this sauce.

    6. Bake in a moderately hot oven (400°F) for 25 minutes.

    7. Garnish with parsley and lemon.
