1½ cups cubed mutton
6 cups beans, aubergine or other vegetable
1 tablespoon fat
1 large onion, minced
1 pint cold water
4 medium tomatoes
Salt and pepper

How To Cook: |

|
1. Prepare the meat and vegetables; heat the fat in a saucepan and sear the meat, then add onion and fry until brown. Add the vegetable and stir all together.

2. Cook for about 10 minutes, add the water, peeled and chopped tomatoes and seasoning. Stir well and allow simmering slowly for 45 minutes until it is all tender. The stew should be served with plain rice.

3. Most vegetables may be used-green beans, aubergine, potatoes, haricot beans (soaked overnight before using), tomato, cauliflower, peas or artichokes.

4. If chestnuts are used they should be cooked longer. Tomato should not be added to chestnut or cauliflower stew and the cauliflower should be divided into small pieces and fried before using.
