What You Need:            (To Serve: 4 - 6)

  • 2 pound of white fish (haddock or small cod)

    FOR THE FILLING
  • 4 oz chopped nuts
  • 4 tablespoons lemon juice
  • 6 stoned prunes
  • 2 oz sultanas
  • Chopped parsley

  • How To Cook:
    1. Clean the fish and wipe dry.

    2. Mix all the filling ingredients together and pack into the fish, securing with toothpicks.

    3. Arrange the fish on a grid over a baking pan containing a few inches of water.

    4. Cover with foil and bake in a moderate oven (350°F) for an hour or until the fish is cooked.
