What You Need:

  • 1 pound flour
  • Water

  • How To Cook:
    1. Sieve flour. Sprinkle 1 tablespoon of water over half of it and work it well in, rubbing continually between the hands.

    2. Continue adding a small amount of flour and a sprinkling of water until all the flour is used up.

    3. Break up the larger lumps now and again and work in this way for 20 minutes or so, rubbing the mixture between the hands until it forms grains resembling large semolina in appearance.

    4. Be very careful not to add too much water.

    5. Sieve to ensure uniformsized grains, then leave to dry.

    6. Note: Semolina, though it has smaller grains, may be used as a substitute for cuscus.
