What You Need:

  • ½ pound butter
  • A good pinch of ground cinnamon
  • ½ pound sugar
  • 3 eggs
  • Rind of 1 lemon
  • ½ pound flour
  • 3 tablespoons rum or brandy
  • 1 teaspoon baking powder
  • Halved glace cherries or chopped blanched almonds (if desired)
  • A good pinch of ground cloves

  • How To Cook:
    1. Grease and flour a cake tin.

    2. Cream the butter and sugar.

    3. Add the beaten eggs and the sieved flour and baking powder alternately.

    4. Then add the other ingredients.

    5. Bake in a moderate oven (350°F) for 1 hour.
