  • 2 long, thin cucumbers
  • 1 tablespoon soya sauce
  • cup minced pork
  • 1 teaspoon salt
  • cup dry breadcrumbs
  • teaspoon sugar
  • 1/8 teaspoon peeled and shredded ginger root, or teaspoon powdered ginger
  • teaspoon monosodium glutamate
  • 1 - 2 tablespoons cooking oil
  • 1 tablespoon red wine vinegar

  • How To Cook:
    1. Wash, peel and trim the cucumbers; cut across into slices about 1 inches thick and hollow out the centre.

    2. Mix the pork with the remaining ingredients, except the oil, and pack into the cucumbers.

    3. Heat the oil in a saucepan, stand the stuffed cucumbers in the oil and cook gently until tinged with brown, then turn and brown the other end.

    4. Add cup water, cover, turn the heat low and continue cooking for 8-10 minutes longer.

    5. The cucumbers should be tender but not soft, and the pork done through.
