What You Need:            (To Serve: 4 - 6)

  • 1½ - 2 pound lightly poached white fish (haddock, flounder, etc.)
  • 2 bay leaves
  • 1 teaspoon sugar
  • 1 tablespoon tomato puree
  • 1 cup olive oil
  • 2 - 3 garlic cloves, crushed
  • 1 cup white wine vinegar
  • 6 medium-sized onions, very thinly sliced
  • A dash of pepper
  • ½ teaspoon salt

  • How To Cook:
    1. Marinade the fish overnight in a mixture made by combining all the ingredients except the onion rings.

    2. Arrange the onions on top of the fish.

    3. The next day, drain the fish and serve cold, with tomato and potato salad.
