(Pastelitos De Dulce)

  • 1¼ pound flour
  • Quince jam
  • 6 oz butter
  • Oil for frying
  • 1 small cup water
  • Hot vanilla-flavored sugar syrup
  • A pinch of salt
  • Melted butter

    SYRUP
  • 1 pound sugar
  • Water
  • Vanilla essence

  • How To Cook:
    1. Place the flour on board and add the salt, 6 oz. butter and water to make soft dough.

    2. Knead, leave to rest for a little and roll out rather thinly.

    3. Spread with melted butter, sprinkle with flour and fold in two.

    4. Re-butter, sprinkle with flour and fold again, then flatten with the rolling pin and cut into 5-inch squares.

    5. Take half the squares and place on each 1 tablespoon jam thinned with a little water; moisten the edges and cover with another square, pressing the edges.

    6. Fry in very hot oil. Dip the 'pastelitos' in hot syrup and cook for 2 minutes.

    7. To make the syrup

    8. Put sugar in saucepan, cover with water, add some vanilla essence and boil for 5 minutes.
