  • 4 pound pork
  • Demerara sugar
  • Salt
  • 3 - 4 bay leaves
  • 1 tablespoon sugar
  • 12 - 14 peppercorns
  • Wine

  • How To Cook:
    1. Buy a piece of belly of pork weighing about 4 pound and rub it over first with Demerara sugar, then with coarse kitchen salt, and leave it for 5-6 days, turning and rubbing with the liquid every day.

    2. Then wash it and put in a pan with 3-4 bay leaves, 1 tablespoon sugar and about 12-14 peppercorns.

    3. Boil it in wine or water for about 6 hours and then press it between 2 plates.

    4. This pork is delicious with turkey, chicken or pheasant.
