What You Need:

  • 4 oz bread
  • Whipped cream or custard sauce
  • 2 tablespoons water
  • 4 oz sugar
  • 1 pound raspberries and red-currants

  • How To Cook:
    1. Put the water and sugar together and bring to the boil, add the fruit and stew carefully until tender.

    2. Line a pudding basin with thin slices of bread, pour in the stewed fruit and cover with thin slices of bread: the basin should be quite full.

    3. Place a saucer with a weight on it on top of the pudding and leave for several hours.

    4. Turn out and serve with whipped cream or cold custard sauce.
