What You Need:

  • 5 oz flour
  • A tiny piece of finely crushed vanilla pod or a few drops of essence
  • ¾ oz icing sugar
  • 1½ oz blanched and grated almonds or walnuts
  • 4 oz butter
  • A little grated lemon rind
  • 1 egg yolk
  • Vanilla sugar

  • How To Cook:
    1. Mix the flour, icing sugar, nuts, lemon rind and vanilla.

    2. Chop the butter into the mixture, add the egg yolk and mix to a paste.

    3. Leave in a cool place for 15 minutes.

    4. Roll the paste out, cut into small strips and make into little rolls by rolling in the hands.

    5. Put on a baking tin covered with greaseproof paper and bake in a slow oven (325°F) until lightly browned.

    6. Dip the hot rolls into vanilla sugar.
