What You Need:            (To Serve: 2 - 4)

  • 2 pound shoulder or leg of veal
  • 1 tablespoon green peas
  • A little anchovy paste
  • 1 small carrot, a piece of celeriac, a piece of parsley root and 1 onion
  • 4 oz butter
  • 1 pickled cucumber, chopped

  • How To Cook:
    1. Prepare the meat.

    2. Parboil the root vegetables and onion in a little salted water, then dice them, add the peas, the anchovy paste beaten with a small piece of butter and the chopped cucumber.

    3. Beat the veal well, spread with the vegetable mixture and roll up, securing it well.

    4. Pour some melted butter over it and cook in a moderate oven (350F) till brown, adding a little water from time to time.

    5. Cut the roll into slices and serve with mashed potatoes or rice.
