What You Need:

  • 5 oz butter or margarine (chilled if possible)
  • ½ cupful water
  • Salt
  • 1 egg white
  • 5 oz flour

    FOR THE FILLING
  • 5 oz ground almonds
  • Finely grated rind of 1 lemon
  • 5 oz sugar
  • A pinch of salt
  • 1 egg

  • How To Cook:
    1. First make the filling. Mix the ground almonds, sugar, salt, grated lemon rind and egg and pass the mixture once through the mincer. Knead it together again and shape it into a roll about 1½ inch in diameter.

    2. Divide the butter into fair-sized pieces and mix with nearly all the flour.

    3. Add the water and salt and stir with a knife until the flour has absorbed the water.

    4. Roll the dough out on a floured board very lightly, then fold again and roll; repeat three times and finally roll it out to give a strip ¼ inch thick and 3 inches wide.

    5. Put the almond filling on this and fold the dough round it, sticking the edges together with water.

    6. Shape the roll into letters (e.g., the initials of the guest of honour). To make a C, seal the ends of the curved roll with some dough; for O or D, join the ends together.

    7. Brush with egg white, and bake in a moderately hot oven (425°F) for 30 - 40 minutes.
