What You Need:            (To Serve: 2 - 4)

  • 2 pound asparagus
  • Salted water
  • 3 eggs
  • 4 oz butter
  • Salt and pepper

  • How To Cook:
    1. Trim asparagus and cut it into even-sized lengths.

    2. Wash it very thoroughly, then plunge it into slightly salted boiling water and cook for 12 - 15 minutes.

    3. Prepare a sauce; sieve the yolks of hard-boiled eggs, add melted butter gradually and season with salt and pepper.

    4. Serve with the sauce poured over the asparagus.
