	1. Clean the spinach, soak it in water for 10 minutes and transfer it to a pan with no water, except what clings to the leaves; lid tightly and cook until tender, drain well and sieve.

	2. Make a sauce with 2 oz. butter, flour and milk, season well, and add the spinach and the egg yolks.
  
 | 
	3. Finally, whisk the egg whites until stiff and fold into the mixture.
  
 | 
	4. Pour into a greased and lined baking tin and bake in a moderately hot oven (400°F) for 20 minutes.

	5. Meanwhile make a filling by heating the ham in the remaining fat, and then add the cream.
  
 | 
	6. Turn the spinach pastry out on to a board covered with damped paper, spread it with the filling and roll up like a Swiss roll. (This must be done whilst the pastry is hot.)

	7. Cover with greased paper, and reheat in the oven.
  
 | 
	8. Serve sprinkled with cheese and accompanied by cheese sauce.
