What You Need:

  • 4 cups berries
  • 4 cups water
  • 1½ cups sugar
  • 1 2-3-inch piece of cinnamon
  • 3 - 4 cloves
  • 2 heaped tablespoons potato flour

  • How To Cook:
    1. Mash the berries, combine with water, boil for 5 minutes and press through a sieve.

    2. Reserve quarter of the liquid and allow cooling.

    3. Combine the rest with the sugar, cinnamon and cloves, and simmer another 10 minutes. Discard the cloves.

    4. Dissolve the potato flour in the cooled liquid and, when thoroughly blended, pour into the hot liquid.

    5. Stir continuously over heat for 2 minutes.

    6. Wet a mold or bowl, sprinkle with sugar and pour in the fruit cream.

    7. Chill and allow thickening for about 2 hours.
