This is the story they tell to explain the origin of these pancakes. One day, when the old Emperor Joseph was out hunting in the Tyrol, he went into a mountain peasant's house and asked for a meal to be served. .But the girl making the sweet was so nervous at cooking for the Emperor that she broke the pancake in the pan, and burst into tears. To cover up the mistake, her mistress broke the whole pancake into small pieces, and served it as a "special dish." The Emperor graciously declared himself very pleased with the dish, which was henceforward known as "Kaiserschmarren," or literally - Emperor's fragments!

What You Need:

  • 3 oz flour
  • ¼ pint milk
  • 1½ oz sugar
  • 2 eggs
  • 1 oz butter
  • 1 oz sultanas

  • How To Cook:
    1. Put the flour and sugar in a basin, and add the melted butter, milk and egg yolks.

    2. Fold in the stiffly beaten egg whites and the sultanas.

    3. Pour into a well-buttered hot frying pan, and let the mixture set and brown on the underside, but be careful not to let it burn:

    4. When it is golden brown underneath, turn it over, and when again brown underneath, tear it into irregularly shaped pieces (the so-called Schmarren) with two forks.

    5. These pieces can then continue to cook very gently until you are ready; sprinkle caster sugar on top before serving.
