This is a salty relish and is eaten in small amounts with rice.

What You Need:            (To Serve: 2 - 4)

  • 1 pound mackerel or perch
  • ¼ teaspoon pepper
  • ¼ cup soya sauce
  • 1 spring onion
  • 3 tablespoons water
  • 1 clove of garlic
  • 1 tablespoon sugar
  • ½ teaspoon candied ginger

  • How To Cook:
    1. Skin, bone and clean the fish, then cut into pieces 1 inch square and ¼ inch thick.

    2. Add the soya sauce, water, sugar and pepper.

    3. Cut the onion (including the top), the garlic and the ginger diagonally into thin pieces and add to the fish.

    4. Mix well and cook until the fish is tender.
