Southwestern Pizza
What You Need:
  • 1 tablespoon vegetable oil
  • A 15-inch wheat tortilla
  • 2 cups freshly grated longhorn or sharp Cheddar cheese
  • 3 canned green chilies (not the jalapeno variety), drained, slit lengthwise in half, seeded and cut into ¼-inch-wide strips

  • How To Cook:
    1. Preheat the oven to 375°F. With a pastry brush, spread the vegetable oil evenly over the bottom of a I5-inch pizza pan and place the wheat tortilla in the pan.

    2. Scatter the grated cheese over the tortilla. Then arrange the chilies on top in eight strips, radiating from the center like the spokes of a wheel.

    2. Bake in the middle of the oven for 10 minutes, or until the cheese is melted and delicately browned. Serve at once, directly from the pan.
     
    Serving Size: one 15-inch pizza
