Caribbean Cocktail
What You Need:
  • ˝ cup canned pineapple juice
  • 2 ounces medium-dark rum
  • 1 tablespoon strained fresh lime juice
  • ˝ teaspoon Angostura bitters
  • 1 cup crushed or finely cracked ice
  • Superfine sugar
  • Club soda
  • Freshly grated nutmeg

  • How To Cook:
    1. Combine the pineapple juice, rum, lime juice, bitters and ice in a mixing jar, and place a bar shaker on top of the glass.

    2. Grasping the glass and shaker firmly together with both hands, shake them vigorously 9 or 10 times.

    3. Taste and add superfine sugar, if desired.

    4. Remove the shaker and pour the cocktail, unstrained, into 2 chilled 8-ounce old-fashioned glasses.

    5. Add enough club soda to fill each glass to the brim. Grate a little nutmeg on top and serve at once.
