Apple Snow
(Omenalumi)
What You Need:
  • 4 egg whites
  • Pinch of salt
  • ˝ cup sugar
  • 2 cups tart applesauce, freshly made, canned or bottled
  • ˝ teaspoon lemon juice
  • 1/8 teaspoon cinnamon
  • How To Cook:
    1. With a large, balloon whisk, beat the egg whites and the pinch of salt in a large mixing bowl (preferably of unlined copper) until they begin to foam.

    2. Gradually add the sugar and continue to beat vigorously until the whites are stiff enough to form unwavering peaks when the beater is lifted out of the bowl. (A rotary or electric beater may be easier to use, but the whites will not rise so voluminously nor have so fine a texture.)

    3. In a separate bowl, combine the applesauce and lemon juice. Stir a heaping tablespoon of the beaten egg whites into the applesauce to lighten it.

    4. Then, with a rubber spatula, gently fold in the rest of the whites, using an under-over cutting motion rather than a rotary motion. Turn the apple snow into a serving bowl and sprinkle the top with cinnamon.

    NOTE: The Finns serve apple snow as soon as it is made, but it can be frozen effectively in ice-cube trays and served as an ice.

    To Serve: 6 to 8
