Mushroom Sauce For Boiled Beef

What You Need:
  • 5 tablespoons butter
  • ½ pound fresh mushrooms, sliced
  • 3 tablespoons finely chopped onions
  • 2 tablespoons flour
  • 1 cup beef stock, from the boiled beef or canned
  • Salt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley

  • How To Cook:
    1. Heat 3 tablespoons of the butter in a heavy skillet on high heat. When the foam subsides, add the mushrooms and the onions. Stirring occasionally, cook them for about 5 minutes.

    2. Melt the rest of the butter in the skillet, then remove the skillet from the heat and stir in the flour. Continue to stir until the flour has been absorbed by the butter.

    3. Return the skillet to the heat, stir in the stock and simmer for about 10 minutes. Taste for seasoning. Add the lemon juice and parsley to the sauce just before serving.

    To Make: 1¼ cups sauce
