Marinated Shrimp
(Garides Se Lathoxitho)
What You Need:
  • 3 pounds medium-sized shrimp, cooked, peeled, and deveined
  • ˝ pound small mushrooms, wiped clean
  • 1 pound canned artichoke hearts, drained and cut into thirds

    MARINADE
  • 2 large red onions, sliced thin
  • 3 tablespoons capers, drained and rinsed
  • 3 bay leaves
  • cups white vinegar
  • 1˝ cups water
  • 1˝ cups olive oil
  • 1 teaspoon salt
  • ˝ teaspoon pepper
  • ˝ teaspoon dried oregano

    How To Cook:
    1. Combine all marinade ingredients. Refrigerate overnight.

    2. On the second day add cooked shrimp, mushrooms, and artichoke hearts.

    3. Refrigerate overnight and serve on the third day.

    To Serve: 16 to 20
