1. Wash octopus carefully and discard the ink sac. Cut octopus into bite-sized pieces.

2. Saute onions in olive oil until soft and golden.
|
3. Add octopus, salt, pepper, and bay leaf, and simmer for 10 minutes. Add wine and enough water to cover.
|
4. Bring to boil, cover, and simmer for about 1 hour, or until octopus is tender. Serve with Rice Pilaf.
