Yogurt Cake

What You Need:
  • 2 cups yogurt, undrained
  • 3½ cups farina
  • 1 teaspoon baking soda
  • 2 teaspoons double-acting baking powder
  • 2¼ cups sugar
  • 1 cup chopped blanched almonds
  • 2 tablespoons grated orange peel

    SYRUP
  • 3 cups water
  • 3½ cups sugar
  • 1 tablespoon grated lemon peel

    How To Cook:
    1. Preheat oven to 350°.

    2. Place yogurt in a bowl and stir with a fork. In another bowl, combine farina with baking soda and baking powder, add to yogurt.

    3. Add sugar, almonds, and orange peel to the yogurt mixture and mix well for 2 or 3 minutes.

    4. Pour batter into a well-greased 9-inch square baking pan and bake for 30 to 40 minutes, or until cake tester comes out clean.

    WHILE CAKE IS BAKING, PREPARE THE SYRUP:
    1. Place water and sugar in a saucepan and bring to a boil. Add lemon peel. Simmer for 10 minutes.

    2. Pour hot syrup over hot cake. Let cool. Cut into 8 to 10 pieces.

    To Serve: 8 to 10
