Amy's Gaelic Irish Tripe Stew
What You Need:
  • 2 to 2˝ pounds honeycomb tripe, diced
  • 1 quart milk
  • 3 to 4 medium onions, sliced
  • 3 or 4 medium potatoes, diced
  • Salt, pepper and chopped parsley to taste

  • How To Cook:
    1. Wash tripe; cover with water.

    2. Simmer tripe 2 hours, or until tender; drain well.

    3. Add milk, onions and potatoes; cover and simmer 1 hour longer, or until vegetables are tender.

    4. Add salt and pepper to taste.

    5. Garnish with chopped parsley; serve warm.

    To Serve: 6 to 8
