What You Need: |

2 tablespoons butter or margarine
1½ cups sliced onion
1 tablespoon flour
1 cup chicken broth
1 cup apple juice
2 tablespoons lemon juice
½ teaspoon salt
¼ teaspoon caraway seeds
1¼ pounds Idaho potatoes, unpeeled and cut in large chunks
1 pound cooked ham, cut in large cubes
½ pound pitted prunes
2 red apples, cored and cut in wedges

How To Cook: |

|
1. Melt butter in a Dutch oven or large covered saucepot.
|
2. Saute onion in butter until golden.
|
3. Stir in flour; gradually add broth, apple juice, lemon juice, salt and caraway seeds, stirring until thickened.
|
4. Add potatoes, ham and prunes; bring to a boil.
|
5. Cover and simmer 15 minutes.
|
6. Add apples; cover and simmer 15 to 20 minutes longer, or until potatoes and apples are tender, stirring occasionally.
