German Potato Apple Stew
What You Need:
  • 2 tablespoons butter or margarine
  • cups sliced onion
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1 cup apple juice
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon caraway seeds
  • 1¼ pounds Idaho potatoes, unpeeled and cut in large chunks
  • 1 pound cooked ham, cut in large cubes
  • ½ pound pitted prunes
  • 2 red apples, cored and cut in wedges
  • How To Cook:
    1. Melt butter in a Dutch oven or large covered saucepot.

    2. Saute onion in butter until golden.

    3. Stir in flour; gradually add broth, apple juice, lemon juice, salt and caraway seeds, stirring until thickened.

    4. Add potatoes, ham and prunes; bring to a boil.

    5. Cover and simmer 15 minutes.

    6. Add apples; cover and simmer 15 to 20 minutes longer, or until potatoes and apples are tender, stirring occasionally.

    To Serve: 4
