Pepper Steak
(Steak Au Poivre)
What You Need:
  • 4 teaspoons coarsely ground pepper
  • 1 Spencer or other steak (about 3 pounds), 1˝ inches thick
  • 3 tablespoons butter
  • 2 tablespoons olive oil salt
  • ˝ cup brandy
  • Heavy cream (optional)
  • Parsley (for garnish)

  • How To Cook:
    1. Press pepper firmly into both sides of steak, using the heel of your hand.

    2. Heat butter and oil in a large skillet over high heat; add steak and sear on both sides.

    3. Reduce heat slightly; cook 6 to 7 minutes on each side, depending on desired degree of doneness.

    4. Remove steak to a heated platter; sprinkle lightly with salt.

    5. Add brandy to drippings; heat until bubbling.

    6. Add a small amount of cream; pour brandy mixture over steak.

    7. Garnish with parsley.

    To Serve: 6
